Healthy Sheet-Pan Dinners: 5 Weeknight Formulas
Some nights, dinner needs to be one pan, one oven and very little thinking. That's the beauty of a sheet-pan supper: everything roasts together, the oven does the work, and cleanup is a single rinse.
Rather than five rigid recipes, here are five formulas. Learn the shape of each and you can swap in whatever's in your fridge.
The basic formula
Every dinner below follows the same pattern:
- Protein, about 1 1/2 pounds for four people.
- Two vegetables, one sturdy and one quicker-cooking, about 6 to 8 cups total.
- A flavor base: 1 to 2 tablespoons of oil plus spices, herbs or a simple sauce.
- A finisher: something fresh or bright added after the oven, like lemon, yogurt or herbs.
The finisher is what makes a weeknight meal taste like you tried. Don't skip it.
A few rules that make every formula work
- Give food room. Crowded vegetables steam instead of browning. If the pan is full edge to edge, split it across two sheets.
- Cut for the clock. Dense vegetables like potatoes and carrots go in smaller pieces or get a head start. Tender ones like zucchini and green beans go in larger pieces or later.
- Toss in a bowl, not on the pan. You'll coat everything evenly with less oil.
- Use a thermometer. It's the easiest way to know protein is done without cutting into it.
For reference, FoodSafety.gov lists safe minimum internal temperatures of 165°F for poultry, 145°F for fish, and 145°F with a three-minute rest for pork chops, roasts and tenderloin.
1. Lemon-Herb Chicken Thighs, Potatoes and Broccoli
Formula: boneless chicken thighs + baby potatoes + broccoli + lemon, garlic and oregano.
- Heat the oven to 425°F.
- Halve 1 pound of baby potatoes, toss with 2 teaspoons of oil and salt, and roast for 10 minutes.
- Meanwhile, toss 1 1/2 pounds of boneless thighs with lemon zest, minced garlic, dried oregano, salt and a teaspoon of oil.
- Add the chicken and a head of broccoli florets to the pan. Roast 20 to 25 minutes, until the chicken reaches 165°F and the broccoli edges are crisp.
- Finish with lemon juice and chopped parsley.
2. Salmon, Green Beans and Blistered Tomatoes
Formula: salmon fillets + green beans + cherry tomatoes + Dijon, dill and honey.
- Heat the oven to 400°F.
- Toss 12 ounces of trimmed green beans and a pint of cherry tomatoes with a teaspoon of oil and salt. Roast 8 minutes.
- Stir together 1 tablespoon Dijon, 1 teaspoon honey and chopped dill. Brush over four salmon fillets.
- Nestle the salmon among the vegetables and roast 12 to 15 minutes, until it reaches 145°F or flakes easily with a fork.
- Finish with more dill and a squeeze of lemon.
3. Chicken Sausage, Peppers and Sweet Potatoes
Formula: chicken sausage + bell peppers and onion + sweet potato + smoked paprika and fennel seed.
- Heat the oven to 425°F.
- Cube one large sweet potato into 3/4-inch pieces. Slice two bell peppers and a red onion into strips.
- Toss the vegetables with 1 tablespoon of oil, smoked paprika, crushed fennel seed and salt. Spread on the sheet.
- Add 1 pound of chicken sausage links, whole or halved. Roast 25 to 30 minutes, turning once. Precooked sausage just needs to brown and heat through; raw chicken sausage should reach 165°F.
- Finish with a spoonful of grainy mustard or a handful of baby arugula.
4. Crispy Chickpeas, Cauliflower and Red Onion
Formula: chickpeas + cauliflower + red onion + cumin, coriander and garlic. A meatless night that still feels hearty.
- Heat the oven to 425°F.
- Drain, rinse and pat dry two cans of chickpeas. The drier they are, the crispier they get.
- Toss the chickpeas, one head of cauliflower florets and a red onion cut in wedges with 1 1/2 tablespoons of oil, cumin, ground coriander, garlic powder and salt.
- Roast 25 to 30 minutes, stirring halfway, until the cauliflower is golden and the chickpeas are crisp at the edges.
- Finish with plain yogurt thinned with lemon juice, plus chopped cilantro or mint. Serve with warm flatbread or over rice.
5. Maple-Mustard Pork Tenderloin, Carrots and Apples
Formula: pork tenderloin + carrots + apples + maple, Dijon and thyme.
- Heat the oven to 425°F.
- Cut 1 pound of carrots into sticks and two firm apples into wedges. Toss with 2 teaspoons of oil, thyme and salt.
- Whisk 1 tablespoon maple syrup with 1 tablespoon Dijon. Rub over a 1 1/4-pound pork tenderloin.
- Set the pork in the center of the pan with the carrots and apples around it. Roast 20 to 25 minutes, until the pork reaches 145°F.
- Rest the pork at least three minutes before slicing. Finish by spooning the pan juices over everything.
Make it your own
Once these feel familiar, start mixing and matching. Shrimp cooks in about 8 to 10 minutes at 425°F, so add it near the end. Firm tofu, pressed and cubed, behaves a lot like the chickpeas. Butternut squash can stand in for sweet potato, and asparagus can replace green beans in spring.
A few kitchen notes. Line your pan with parchment if you're working with sticky glazes. If your oven runs hot or your sheet is dark, start checking a few minutes early. And if you're cooking for a crowd, two sheets on separate racks, swapped halfway through, beat one overloaded pan every time.
Good dinners don't need to be complicated. They need a hot oven, a good pan, and something bright at the end.
