Getting started
Good nonstick is mostly about a few small habits. Do these from day one and your pans will keep releasing eggs, cookies and roast veggies the way they did the first time.
Unbox, peel off every sticker and label, then give each piece a wash in warm, soapy water with a soft sponge. Rinse, dry completely with a towel and you're ready. It takes five minutes and removes any dust from the factory and the trip to your door.
Nonstick and ceramic coatings work best at low to medium heat. Let the pan warm up for a minute or two, add a thin film of oil or butter, and then add your food. Food sticks most when it hits a pan that isn't ready, so a short preheat makes everything release more easily.
Use wooden, silicone or nylon tools, and slice on a board instead of in the pan. When you're done, let the pan cool before it goes in the sink, wash with warm water and a soft sponge, then dry it and stack it away. Stackable sets nest neatly to save cabinet space.

Heat the oven to 425°F. Toss chicken thighs, halved baby potatoes and broccoli with a little oil, lemon, garlic and oregano, spread in one layer and roast until the chicken reaches 165°F.
