How to choose a pizza pan

  1. Pick your pizza size

Choose a 13-inch perforated pan for a personal or medium pizza, or a 16-inch pan for a full family pie. The perforated tray with silicone handles measures 14.8 x 13 inches. If you make several sizes, the 3-piece pizza pan set gives you small, medium and large ceramic nonstick pans. Many styles also come as 2-packs.

  2. Perforated steel and finishes

Most pans here are perforated carbon steel, with small holes across the base. The 13-inch pans come in blue, gray and white marble nonstick and have an oversized silicone handle for an easy grip. The 16-inch pans are 0.6 mm carbon steel in black, blue, gold and silver, so you can match your kitchen.

  3. Heat and cleanup

Every pan with a listed rating is oven safe to 450°F. Most are dishwasher safe, including the 13-inch marble and 16-inch pans, though hand washing now and then helps the nonstick last. Slide pizza onto a cutting board to slice it so you don't scratch the coating, and check that your oven fits a 16-inch pan.
