  • How to Make Crispy Oven Fries With an Air Fryer Basket

Bakken Crisper Tray Set with basket in Gray

To make crispy oven fries, cut russet potatoes into even sticks, soak them in cold water for 30 minutes, dry them completely, toss with a tablespoon of oil, and bake in a single layer on an air fryer basket for oven (also called a crisper tray) at 425°F for 20 to 30 minutes, shaking once. The basket lifts the fries so hot air hits every side, which is what gives you that golden, air-fried crunch without a countertop appliance. Here is the full method, plus timing for other cuts and frozen fries.

Why oven fries turn out soggy

Most limp oven fries come down to three things:

    • Surface starch. Starch on freshly cut potatoes turns gummy and holds moisture.
    • Steam. Wet potatoes, or fries crowded together, steam each other instead of browning.
    • Flat contact. On a plain sheet pan, the bottom sits in its own moisture while the top dries out, so you get one crisp side and one soft side.

Soaking fixes the starch, drying fixes the steam, and an elevated basket fixes the contact problem.

What is an air fryer basket for the oven?

An oven air fryer basket, or crisper tray, is a two-piece set: a raised basket that holds the food and a tray underneath. Because the food sits up off the pan, your oven's hot air circulates around and beneath it, much like a countertop air fryer. The tray below catches drips and crumbs.

Bakken's crisper trays are carbon steel with a nonstick coating and are oven safe to 450°F. The standard Crisper Tray Set in Gray pairs a 12.79 x 9.75 x 0.78-inch tray with a 12.00 x 8.90 x 1.97-inch basket, and its coating is listed as free of PFOA, PFOS, PTFE and BPA. For bigger batches, the XL Crisper Tray Set in White Marble has an 18.90 x 13.19 x 0.79-inch tray and a 19.29 x 11.97 x 1.85-inch basket.

How to make crispy oven fries, step by step

    What you need

    • 2 large russet potatoes (about 1.5 pounds)
    • 1 to 1.5 tablespoons neutral oil, such as avocado or canola
    • 1 teaspoon cornstarch (optional, for extra crunch)
    • 3/4 teaspoon kosher salt, plus more to finish
    • An oven crisper tray and basket

    1. Cut evenly

Scrub the potatoes (peeling is optional) and cut them into sticks about 1/4 to 3/8 inch thick. Even sizing matters more than the exact thickness, because fries of the same size finish at the same time.

    2. Soak for 30 minutes

Cover the cut potatoes with cold water and let them sit for 30 minutes, or up to a few hours in the fridge. The water turns cloudy as the surface starch rinses off. If you are short on time, a quick rinse under cold water still helps.

    3. Dry completely

This step is where crispy fries are made. Drain the potatoes, spread them on a clean kitchen towel, and pat until they feel dry to the touch. Any water left on the surface turns to steam in the oven.

    4. Season lightly

Heat the oven to 425°F. In a dry bowl, toss the fries with the oil until each one has a thin, even coat. Sprinkle with cornstarch and salt and toss again. You need much less oil than you might think. One tablespoon per pound is enough.

    5. Arrange in a single layer

Set the basket on its tray and spread the fries out so they are not stacked. A little touching is fine, but piles will steam. If you have more fries than space, bake two batches or use an XL set.

    6. Bake and shake

Bake on the middle oven rack for 12 minutes, then shake the basket or turn the fries with tongs. Bake 8 to 15 minutes more, until deep golden and crisp at the edges. Season with a pinch of salt as soon as they come out, while the surface is still hot.

Shop the crisper tray collection to find the size that fits your oven.

    Oven fry timing chart

All times are for a crisper basket on the middle rack at 425°F. Ovens vary, so check a few minutes early.

Cut Size Time at 425°F Tip
Shoestring About 1/8 inch 14 to 18 min Shake at 8 minutes; they brown fast
Classic fries 1/4 to 3/8 inch 20 to 27 min Soak and dry for the crispiest result
Steak fries About 1/2 inch wedges 28 to 35 min Turn at 15 minutes
Sweet potato fries 1/4 inch 18 to 25 min Use cornstarch; they scorch more easily, so watch the edges
Frozen fries Per package Package time or a few minutes less No need to thaw or add oil

Can you make frozen fries crispy in the oven?

Yes, and a crisper basket makes a real difference here. Spread frozen fries straight from the bag in a single layer, bake at the package temperature, and shake halfway. Because air reaches the underside, they often crisp a few minutes sooner than the package time for a sheet pan. Most frozen fries are already par-fried, so you can skip the oil.

    Flavor ideas

    • Garlic parmesan: toss hot fries with grated parmesan, garlic powder and chopped parsley.
    • Smoky: add smoked paprika and a little cumin with the salt before baking.
    • Herby: finish with fresh rosemary, thyme and flaky salt.
    • Cajun: season with Cajun spice blend before baking and serve with a creamy dip.

Since this method uses only a tablespoon of oil, it fits right in with our tips on how to cook with less oil.

More than fries: other foods to crisp on the tray

Once you have the basket, use it for anything you would put in an air fryer: chicken wings, breaded chicken tenders, roasted chickpeas, broccoli and Brussels sprouts, fish sticks, and reheated pizza. Keep the oven at or below 450°F, the listed limit for Bakken crisper trays.

    Cleaning your crisper tray

Let it cool, then soak the basket in warm, soapy water for a few minutes to loosen any stuck bits. Wash with a soft sponge or brush and avoid steel wool, which can scratch the nonstick coating. The gray and copper standard sets are listed as dishwasher safe, though hand washing is gentler on any coated surface. For leftovers, refrigerate fries within 2 hours and reheat them on the basket at 400°F for 5 to 7 minutes.

    Quick answers

What temperature makes oven fries crispy?

425°F is a reliable temperature for crispy oven fries. It browns the outside while the inside turns fluffy.

Do you have to soak potatoes for oven fries?

It is not required, but a 30-minute soak removes surface starch and gives noticeably crispier fries. Always dry them well afterward.

Does an air fryer basket for the oven really work?

Yes. Raising food off the pan lets hot air reach every side, so fries and wings crisp evenly without flipping as often.

    Should you flip oven fries?

Shake or turn them once, about halfway through, for even color on every side.
